It’s been three months of quarantine and we are still in phase 2 of reopening here in NC. I don’t know about you guys, but walking to my kitchen to grab a snack is so much more tempting when I’m at home all day! Instead of reaching for oreos or a bag of chips though, keep some of these items on hand! You can also use some of your new-found free time to make a few things from scrath.
Veggies and Hummus
Carrots, cauliflower, snap peas, broccoli, celery, bell peppers, cucumber, whatever you fancy. You can also use pretzels, tortilla chips, crackers, or pita bread. You can make your own hummus with just a few simple ingredients (no oil required!).
Hummus Recipe:
- 1 can chickpeas, drained and rinsed
- 2-3 tbsp tahini
- 2 tbsp lemon juice
- 1/2 tsp garlic powder
- 1/4-1/2 tsp salt (to taste)
*get crazy with some other flavor additions! Just put everything in a blender or food processor, add enough water to thin it out (usually about 1/2 cup for me) and go to town!
Roasted chickpeas
Make these at home in the oven or air-fryer or buy them pre-made at the grocery store (usually in the chips or snack aisle).
Loaded-Up Rice Cakes
you can top these with nut or seed butters (and fresh fruit if you want some sweetness), hummus and thinly sliced veggies, or smashed avocado and greens.
Tofu Jerky
You can make this at home in the oven, dehydrator (pictured), or air-fryer or buy them pre-made at the grocery. I like @louveganjerky brand.
