And it’s not just your usual pumpkin spice oatmeal and bowl of chili. I like to mix it up sometimes so meal planning never gets boring.
Breakfast: Carrot Cake Baked Oatmeal
I love making baked oatmeal for the week! If you want a fun way to add veggies into your breakfast, try this recipe! Adapted from Oh She Glows.
Lunch: Curried Chickpeas
This recipe is fantastic! Inexpensive, satiating, and tasty! You can use canned chickpeas or make your own from dry. I used frozen greens to save some prep time. Adapted from Eating Bird Food.
Snack: Cinnamon Protein Bites and Bananas

Dinner ➳ Vegan Pho
This recipe can be made in the Instant Pot if you follow @karalydonrd “Instant Pot Vegetarian Pho” I just looked at a few recipes and came up with one that fit my liking.
Note: These meals lay the foundation for my week. I am never limited to just these meals and I always keep extra items on hand for additional snacks or meals.
