add dry ingredients to a medium bowl and whisk to combine
add milk and pumpkin and stir well (batter will be thick)
Let batter rest for 10 minutes. Meanwhile, preheat a waffle iron and get our your toppings
Pour batter onto nonstick hot waffle iron and cook until desired (I cook mine for about 6 minutes on medium-high heat)
Enjoy with toppings such as vegan butter, maple syrup, pecans, pepitas, hemp seeds, berries or bananas!
